MKT Chanakya s New Menu Offers A Culinary Journey Through The World s Finest CuisinesMKT Chanakya is not just a restaurant, but a one-of-its-kind food destination. Founded in 2018, it is known for its expansive international food offerings paired with world-class dining experiences. It has been a popular choice for Delhiites ever since it opened, and now there s something more to look forward to. The restaurant recently celebrated a culinary milestone by introducing a brand-new menu for the first time. This comes as a pleasant change for their customers and is something you must definitely try. The new menu at MKT showcases a symphony of fresh, seasonal ingredients, and beloved classics that will take you on a global voyage.
MKT hosted a special chef s table to give us a sneak peek into the revamped menu with reimagined classics. Dharmen Makawana, Corporate Chef at DLF Hospitality, revealed that the thought process behind the menu was to use innovative techniques to create modern cuisine that stays true to its origin while also being surprising. Our gastronomic journey started with a round of Black Chicken. The chicken was perfectly tender and juicy, winning us over with just one bite. We then indulged in the Tofu and Leeks Robatayaki, a delightful and satisfying dish. Following that, we sampled the Tod Man Khao Pad, Thai corn fritters served with red curry paste, herbs, and larb dressing. Their irresistible crispiness paired perfectly with the flavourful red curry paste. To complement these appetisers, we enjoyed two refreshing cocktails: Sombrero and Yellowstone. Both drinks were delicious and set the tone for a fantastic evening.
Post appetizers and drinks, we were escorted to a long table with decorated cutlery and sombre surroundings. We then indulged in a meticulously curated 6-course meal which was nothing short of flavours. Our evening started with a delightful serving of Salmon Carpaccio which we paired with Sombrero. Flavourful and tasty, this dish comprised of Nahm Jim sauce, jicama, cucumber, red jalapeno, bubu arare, herb oil and cilantro. The beautiful mix of flavours took our tastebuds on a rollercoaster ride. This was followed by crispy and spicy prawn that was marinated in chilli bean sauce. What s more, the prawn was stuffed in a taro dough which led to a perfectly crispy outcome. Next, we had Sea Bass Ghee Roast which had the most beautiful brick-red colour. The meat was tender yet so flavourful that it melted in our mouth in no time. The dish was paired with bedgi chilli, raw mango chutney, sprouts, and lime which only complemented the meat s taste.
Before we moved to our next course, we were offered a palate cleanser – passion fruit plum sorbet – which neutralized the flavourful symphony happening on our tastebuds. Next, we were served with lip-smacking prawn gigli that outdid our expectations. Gigli pasta cooked with tender prawn pieces in saffron garlic cream, asparagus, chilli, and basil, this punch of flavours was a great way to resume our gastronomic journey. Following a plateful of Prawn Gigli, we indulged in the delectable Malai Tandoor Lamb Chops which was not just amazing in its presentation but also taste. Since it had malai, the lamb s taste was subtle. But, the smoked kacha aloo and achaar paired with the main dish elevated its taste.
We ended our 6-course meal with a Loaded Chocolate Treat. We feel like we will fall short of words about how it is the most perfect way to end our elaborate meal. Flourless brownies with whipped chocolate ganache, raspberry, and chocolate ice cream, this timeless dessert satiated our sweet tooth.
All in all, our experience at MKT Chanakya was a memorable one. The new menu boasts a variety of international flavours and dishes that will make you visit this restaurant again and again!

Paratha is one dish that has a special place in every Indian s heart. Agreed? Our favourite is aloo paratha! The experience of enjoying the stuffed bread reaches a whole new level when it is prepared in ghee and served along with curd or pickle. But have you heard of vodka paratha? Well, the next chapter in the bizarre food experiments has brought forth a “vodka aloo paratha”. The now-viral clip was shared by stand-up comedian Rahul Dua, wherein he can be seen reacting to a woman preparing the combo. The clip begins with the woman kneading the dough, using vodka instead of water. Listening to this, Rahul says, “Lagta hai Bangalore ki video hai. Water shortage chal rahi hai to improvise karrahe hain. [It seems the clip is from Bangalore. As they are facing water shortage, they appear to be improvising like this].”

Once the dough was ready, the woman can be seen stuffing it with the aloo mixture. After rolling it flat, the woman cooks it like the classic aloo paratha but in the end, pours the remaining vodka onto the hot tawa. Next up, the clip showed her reviewing the vodka aloo paratha. Right after a bite, she can be heard saying that her head started to spin. Sharing the clip, Rahul Dua wrote, “Vodka wale aloo paranthe? Like, for real? Is fusion ka koi fuse uda do isse pehle mera ude! (Please someone ban this fusion before it blows off my mind).”

Needless to say, this foodie experiment didn t go very well with the internet. Innumerable users wondered what was the necessity to come up with such a bizarre combo. A comment read, “But why?”
A user asked, “Bhai. Itna confidence kaha se late hai yeh log? Like seriously. [From where do they get this much confidence]?”
Another joked, “Vodka main aloo, aloo main vodka. Alag hi inception chal raha hai yaha. [Potato in vodka, vodka in potato. It s next level inception].”
Some said this foodie experiment is a scene from a film, as a comment read, “This was a Funny scene of a Bollywood movie, she took this project seriously.”
A few pointed out that the woman used green apple-flavoured vodka. A comment read, “BTW kisi ne check kiya vodka ka flavour. Green apple vale vodke ke saath aaloo ka parantha. The addition of peppery rucola and creamy goat cheese added a delightful textural and flavour contrast, making each bite an exploration of contrasting yet complementary elements.

While the food was an undeniable triumph, the drinks menu left a bit to be desired. The concoctions I tried felt muddled and lacked a clear flavour profile. This was a minor misstep in an otherwise exceptional experience.

The cake itself was moist and dense, studded with generous chunks of perfectly caramelized carrots. She reveals that, unlike the popular belief, maida does not stick to our gut. Explaining her stance, nutritionist Gadre said that this is because we do not consume maida in flour form but cook it in the form of puri. Moreover, the maida-based food we consume is chewed and transferred to our digestive system which has enzymes. So, nutritionist Gadre said that there is no scope for maida sticking to our gut.
However, nutritionist Gadre points out that maida is low in fibre and high consumption of it could lead to constipation. In fact, diabetics should also avoid eating maida too frequently since it could spike the sugar levels in their bodies.

Indian Spice Brands Row : Food Authority To Check Quality Of Spices Sold In India
In a recent development, the Food Safety and Standards Authority of India (FSSAI) has asked the states to collect samples of spices from all the brands available for quality test. This comes after authorities from Singapore and Hong Kong raised concerns about the qualities of certain Indian masalas, according to a government source. In view of the current development, FSSAI has taken samples of spices of all brands, including MDH and Everest, from the market to check whether they meet the FSSAI norms, the source explained, reports PTI. However, the food authority also mentioned that they do not regulate the quality of spices that are exported and will only check the ones sold in the domestic market.
Government top sources weighed in, The order has been given. In three to four days, samples will be collected from all the spice manufacturing units of the country. They further informed that the reports are expected to come from the lab in about 20 days.
For the uninitiated, the Hong Kong and Singapore food regulators have warned people against using four products from two Indian brands - MDH and Everest - over the alleged presence of ethylene oxide at levels exceeding the permissible limit . The International Agency for Research on Cancer refers to ethylene oxide as a Group 1 carcinogen . As per the PTI report, the Spices Board of India, in the meantime, is looking into the ban imposed by Hong Kong and Singapore on the products. We are looking into the matter. We are at it, Spices Board of India Director A B Rema Shree informed.
While MDH is yet to release a statement, the spice brand Everest recently refuted the reports about its products being banned in Singapore and Hong Kong.
Everest is not banned in either country, the company s spokesperson said, further clarifying, Singapore s food safety authority referred to Hong Kong s recall alert and asked our Singapore importer to recall and temporarily hold the product for further inspection .
Roastery In Finland Launches World s First AI-Generated Coffee Blend
Artificial intelligence (AI) is being used in various fields for experimentation and growth, including the world of food. Recently, a roastery in Finland launched the world s first AI-generated coffee blend. For the unversed, coffee blends combine at least two different coffee beans from more than one location or farm. The combination of different coffee beans creates a unique flavour that sets each blend apart. This is the first time that artificial intelligence has been successfully used to launch a new coffee blend by Kaffa Roastery and Elev Consulting in Finland. They named the blend AI-conic Coffee.
How Is AI-Coffee Made?Antti Merilehto from Elev Consulting, a Finnish AI consulting and training company, has been a long-time customer at Kaffa Roastery, which has been roasting coffee since 2007.
Antti and the Kaffa team joined forces to make a coffee blend created with the help of AI. The process of making this unique beverage has been revealed on the AI-Conic Coffee website. Kaffa Roastery had data on each of their existing coffees. They gave this written data to AI-team at Elev, who then started working with AI. The Elev team used modern AI, Large Language Models to determine the best coffee blend. After AI did its part, Kaffa s coffee experts did theirs. The first test roasting was successful, and during the blind tasting, they realized that the perfect blend was there.
Interestingly, they also came up with the name of the product after a little ideation and the use of the AI system ChatGPT 3.5 . The visuals of the product have been also created with the help of AI, made by AI artist Sani Leino.

The popular Pastry Chef from Australia has been exploring various Indian cities like Mumbai, Hyderabad, and recently came to the national capital for a special high tea at The Claridges, New Delhi. Excerpts From NDTV Food s Interview With Chef Anna Polyviou:1. What is the best part about being a pastry chef?
With a smile on her face, Chef Anna says, I think the best part is the opportunity to make people happy when they have a sweet treat. You know, like you saw, everyone s getting excited. It s an experience like no other and makes people feel really special when they re eating it. I think that s really what I love about it.
2. What are the challenges to being a pastry chef that perhaps no other chef faces?
The weight, the waistline is definitely a challenge, Chef Anna jokes, adding on a serious note, But also with savoury, you know, you can always adjust it and fix the problem. Whilst with sweet, that s it. Like, if you have weighted it wrong or something, you can t fix it, you can t go back to it. You have got to start over.
3. What s your favourite colour for a dessert?
Not a big fan of dark-coloured desserts, Chef Anna shares, I like berry colours, so I like the pinks and the purples. Because you don t want your dessert to be too dark. That s always like dark chocolates and stuff, not so much. I like fresh tropical colours. We see mango is a yellowy colour and then berries are like a pinkish-reddish colour. So I like those two areas. It pops out and it gets exciting. But I also love using natural green herbs to balance it out very well. And also edible flowers. I really like flowers, they re beautiful.
4. With more and more people embracing a vegan or gluten-free diet, how does it challenge you as a pastry chef?
Sharing her fresh experience from India, Chef Anna said, I think it is really important. Like, you know, for example, I came to India and Conosh have been hosting me and have organised all these different things like a masterclass, but it has to be eggless. And I was like, oh, okay, but it s not a bad thing, it s just the way society is becoming, and we need to adapt and we need to meet the requirements of our guests. I think that s really important, and I think this time around I m able to learn that. So we ve done different workshops, different masterclasses with Conosh, and we made sure that it was eggless, and then if anyone had dietary requirements, we try to meet them.
5. Do you remember the first dessert you ever made?
Taking a trip down her memory lane, Chef Anna shared, It would have been with my mum because she made me in the kitchen when I never wanted to be in there. I just remember her making cakes, and then she wouldn t let me lick the bowl and I was very upset and she ll take it away from me.
Talking about a special dessert made for her, Chef Anna added, But I just remember when I was a good girl, she would make me a custard with cinnamon on top, in her glass Greek bowl.
I remember the smell, I remember the fact that she used to make it for me when I was good, which was not often, she joked. So when I did get it, it was a treat. I think that s why I really love custards.

6. What are your views on Indian desserts?
I have tried so many of them and I love them. We went to a beautiful hotel when we first came to Delhi, and the pastry chef was Indian. And I always love seeing Indian pastry chefs in India. I think it s really important because for us in Australia, it was always the Europeans would come, and I always wanted to see people that live in Australia to be doing it, she emphasized.
Sharing her newfound love for mangoes, she adds, And I m a big fan of mangoes now because of mango season and everything should have mango in it. That s really good to see.
7. If you ever had to give up one dessert for the rest of your life, which one would that be?
Knowing where to draw a line, Chef Anna expressed, I don t like savoury and sweet together. I really am funny about that. I know sometimes it really works, but I can t process it. A sweet, for me, is a sweet. I don t want to have a savoury item that I don t like.

8. What would be your advice to budding pastry chefs?
Sharing her unfiltered advice, Chef Anna said, I think for me, it s really important to be a sponge, you know, to absorb as much as you can information, also be around like-minded people, surround yourself with people that you inspire to be and people that really encourage you. I think it s a very difficult industry sometimes, and having people that really support you and love you and encourage is really important. But don t think you know it all. We all don t know it all. Just learn, learn, learn, learn. I still learn every day. I still ask the questions, I still read books, I still ring up a friend. So, that s really important.
